A delicious pairing with pears

I love pears, but I often get into the rut of eating them solely out of hand. But they’re so wonderful when they’re cooked. Their buttery texture and distinctive flavor make them fine companions for poultry. Here I take advantage of turkey from the supermarket deli and team it with pear slices sautéed with raisins and fresh ginger. The thinner you slice the pears, the better they’ll work in this dish. Any shade of pear will work, but red pears will add a bit more color to the finished dish. TURKEY WITH PEAR-RAISIN-GINGER SAUCE 1 tablespoon plus 1 teaspoon olive oil 1 pound sliced deli turkey ½ cup golden or regular raisins ¼ cup white wine 2 ripe pears, thinly sliced 1 piece (1-inch long) ginger root, minced ¼ teaspoon salt Freshly ground pepper Heat a skillet over medium heat; add 2 teaspoons of the oil. Cook the turkey until warmed through, 4-5 minutes. (You also can microwave the meat on high for about 1 minute.) Transfer turkey to a plate; keep warm. Meanwhile, heat the remaining 2 teaspoons of the oil in the skillet; raise heat to medium-high. Add the raisins and wine; cook, stirring, until raisins plump slightly, about 3 minutes. Add the pears, ginger, salt and pepper to taste; cook, stirring occasionally, until pears soften, 5-7 minutes. Divide turkey among four plates; top with pear-raisin mixture. Nutrition information per serving: 281 calories, 25 percent of calories from fat, 8 g fat, 1 g saturated fat, 62 mg cholesterol, 38 g carbohydrates, 16 g protein, 1,509 mg sodium, 4 g fiber Preparation time: 10 minutes Cooking time: 15 minutes Servings: 4 Tip: Don’t want to cook with wine?
